It appears to be a snail infected with a parasite called "Leucochloridium Paradoxum." After reaching the snail's stomach, the parasite goes all the way up to its eyes, attracting the bird's attention by repeating contraction and expansion. If you Google it, you'll find a lot of actual videos, but it's much more gross than what's in this video, so please think about it before you watch it.
